Vegetable and Cheese Casserole

Ingredients:

6 large eggs

1 cup milk

2 cups shredded cheese (cheddar, mozzarella, or a mix)

1 medium onion, chopped

1 bell pepper, chopped

2 cups diced cooked potatoes or cooked pasta (optional)

1 tsp salt

1/2 tsp black pepper

Olive oil for sautéing

Instructions:

  1. Preheat the oven to 180°C (350°F) and grease a large baking dish.
  2. Sauté the vegetables: Heat some olive oil in a pan and sauté the chopped onion, bell pepper, and any other vegetables you like (such as zucchini or mushrooms) until soft.   3. Prepare the egg mixture: In a large bowl, whisk together the eggs, milk, salt, pepper, paprika, and garlic powder.

  5. Pour into the baking dish and spread it evenly. Top with the remaining ½ cup of cheese.
