These nutrient-packed, flourless, and sugar-free cookies are perfect for a healthy snack or an energy boost. Packed with nuts, seeds, and a touch of natural honey, they provide a delicious way to enjoy an energy dessert without any processed ingredients.
Ingredients:
- Peanuts – 100 g (finely chopped)
- Walnuts – 50 g (finely chopped)
- Almonds – 50 g (finely chopped)
- Pumpkin seeds – 30 g
- Sunflower seeds – 40 g
- Sesame seeds – 1 tbsp
- Poppy seeds – 1 tbsp
- Flaxseed – 1 tbsp
- Natural honey – 1 tbsp (or substitute with date syrup or agave nectar for a vegan option)
- White of 1 egg (to bind the ingredients)
Instructions:
- Preheat the Oven: Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
- Prepare the Ingredients: In a large mixing bowl, combine the peanuts, walnuts, almonds, pumpkin seeds, sunflower seeds, sesame seeds, poppy seeds, and flaxseed. Stir well to mix.
- Add Honey and Egg White: Add the honey and the egg white to the mixture. Stir until everything is well combined, and the ingredients start sticking together. The egg white will help bind the mixture without the need for flour.
- Form the Cookies: Scoop about a tablespoon of the mixture at a time and shape into small, round cookies. Place them on the baking sheet, leaving a bit of space between each one.
- Bake: Place the baking sheet in the oven and bake for 12–15 minutes, or until the cookies are golden and firm to the touch.
- Cool: Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Tips:
- Storage: Store these cookies in an airtight container at room temperature for up to a week.
- Optional Add-Ins: For a different flavor, you can add cinnamon, a dash of vanilla extract, or a sprinkle of coconut flakes.
