Vegan Custard Apple Cake

Ingredients:
For the Cake:

2 cups all-purpose flour
1 cup custard apple pulp (from approximately 2 custard apples)
1 cup almond milk (or any plant-based milk)
1 cup granulated sugar
1/2 cup vegetable oil
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
For the Frosting (Optional):

1 cup powdered sugar
2 tablespoons vegan butter, softened
1-2 tablespoons almond milk
1/2 teaspoon vanilla extract
Instructions:
1. Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
2. Prepare the Custard Apples:Cut custard apples in half, remove the seeds, and scoop out the pulp. Mash or blend until smooth.
3. Make the Cake Batter:

In a large bowl, mix custard apple pulp, almond milk, sugar, vegetable oil, apple cider vinegar, and vanilla extract until the sugar dissolves.
In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
Gradually mix dry ingredients into the wet ingredients until just combined. Don’t overmix.
4. Bake the Cake:

Pour the batter into the prepared cake pan and smooth the top.
Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
5. Prepare the Frosting (Optional):

Beat together powdered sugar, vegan butter, almond milk, and vanilla extract until creamy.
6. Frost the Cake:

Once cooled, frost the cake and optionally drizzle with extra custard apple pulp.
7. Slice and Serve:

Slice into servings and enjoy!
