Ingredients (6–8 pancakes)2 cups of cauliflower cooked and crushed2 eggs1⁄2 cup grated low-fat cheese (can be light mozzarella or light manchego)1⁄4 cup ground oats2 tablespoons of fresh parsley1 clove grated garlic (optional)Salt and pepper to taste1 tsp olive oil (only if cooked in a pan)Preparation:Prepare the cauliflowerSteam the cauliflower until tender (about 10 minutes).Let cool slightly and mash very fine or pass through the food processor (without becoming mash).Place on a clean cloth and squeeze out excess water to keep the pancakes a good consistency.Mix up the ingredientsIn a bowl, mix cauliflower, eggs, grated cheese, ground oats, parsley, garlic, salt and pepper.Slightly knead until integrated.
