Garlic Parmesan Chicken Skewers

Ingredients:

  • 2 lbs chicken tenders, thighs, or breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 stick butter, melted
  • 8 to 10 cloves garlic, minced
  • 1/2 cup grated Parmesan
  • 1 tbsp hot sauce (or more to taste)
  • 2 tsp red pepper flakes
  • 1/3 cup fresh parsley, minced
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Preparation:

  1. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. In a bowl, mix together the olive oil, melted butter, minced garlic, Parmesan cheese, hot sauce, red pepper flakes, parsley, paprika, garlic powder, onion powder, salt, and black pepper until well combined.
  3. Thread the chicken pieces onto the skewers and brush them generously with the garlic Parmesan mixture, making sure each piece is coated.
  4. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and has a nice char.
  5. Serve hot, garnished with extra Parmesan and parsley if desired.
