Ingredients:

  • 2 ½ teaspoons (1 packet) active dry yeast
  • ¾ cup warm water (about 43°C)
  • ¼ cup granulated sugar
  • ½ teaspoon salt
  • 1 large egg
  • ½ cup whole milk
  • 3 ½ to 4 cups all-purpose flour
  • 2 tablespoons unsalted butter, softened
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions:

  1. Activate the Yeast:
    In a small bowl, dissolve the yeast in warm water. Let it sit for about 5 minutes until it becomes frothy.
  2. Prepare the Dough:
    In a large mixing bowl, whisk together sugar, salt, egg, and milk. Add the yeast mixture and mix well. Gradually add 3 ½ cups of flour and softened butter. Knead the dough for about 5-7 minutes, adding more flour if necessary, until the dough is smooth and elastic.
  3. Let it Rise:
    Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise for about 1 ½ to 2 hours, or until it doubles in size.
  4. Roll and Cut:
    Roll out the dough on a floured surface to about ½ inch thick. Cut into squares or rectangles (about 2-3 inches).
  5. Fry the Beignets:
    Heat vegetable oil in a deep fryer or a heavy pot to 175°C. Fry a few pieces at a time until golden brown (about 1-2 minutes per side). Remove with a slotted spoon and place on paper towels to drain.
  6. Dust with Sugar:
    Generously sprinkle powdered sugar on top while they are warm.
